'Giolitti,' Rome's famous gelato shop

2013-09-22

This gelato shop is one of the Roman symbols of the Dolce Vita. It's called Giolitti and its located just a few steps from the Pantheon and the Fontana di Trevi. Nearly every tour guide stops here, so visitors can enjoy one of these famous frozen treats.

The shop has over 120 different flavors. From the traditional, raspberry and chocolate, to the more adventurous like pistachio. For more refined palates there’s the latest flavor of champagne.

"The champagne gelato was a challenge because I wanted to make it with real champagne, then mix it with sugar and let it ferment. You know, it’s very tough to freeze ice cream with alcohol.”

The Giolitti family has always been passionate about gelatos. Their story dates back to 1870 when they opened the first Giolitti shop to sell milk, cream and butter. Sixty years later, in 1930 they opened up their first gelato shop. Now it has been four generations of making gelatos.

"The only thing that has changed is that before, my grandfather would crack an egg and separate the whites and yolk by hand. But today, thank God, we use pasteurized eggs.”

They say their secret to success for this shop is their focus on their hand-made gelato. Giolitti maintains all the classic flavors throughout the year, but they choose season fruits to create the remaining selections. Their gelato-making process aims to find a balance between tradition and innovation.

"First we clean the fruit, hygiene is always first, and then we peel it and blend it. But we use a working rhythm, that it would be very tiring if we didn’t use it.”

Each flavor has its own story. The creative process for each new flavor includes the best ingredients, and the best techniques. That winning combination has made Giolitti the most famous gelato shop in Rome.
