The kingâ??s ice cream maker turns a concept into reality

Giacomo Fassi was once known as the 'kingâ??s ice creamâ? maker because he worked at the Residence of the Royal House of Savoy. 

Yet, he resigned from his job when the King ordered all the kitchen staff to shave. Fassi refused to shave off his mustache and decided to build his own ice cream factory dynasty.

'The gelato mixers are three people and they boil a mixture and then make the gelato. There is a secret about this mixture because there is a very perfect balance to this raw materials and we fallow the same, identical production of my great-grandfather.â? 

Five generations later, it is hard to imagine that the grand Palazzo del Freddo was once a small Kiosk.

The Palazzo del Freddo has had several temporary homes all over Rome before the Fassi family was able to move to larger space in 1928.  The store was so big that during World War II, the American Red Cross took over the activity for two years, in order to produce ice cream for the troops.
 
But, not everything is big in size here. The Palazzo is known for its tiny, semifreddo gelato squares called 'sanpietrini,â? a name inspired by Romeâ??s ancient roads.

'The most important thing is that we would like to maintain the homemade, hand-crafted production. And at the same time let people that we are the first ice cream shop in Italy.�

Today, Palazzo del Freddo opens its doors to over three thousand costumers daily. With store locations in Italy and South Korea, they are always evolving the production process of quality gelato, making it a leading brand in the ice cream industry.
